Costa Rican avocado soup is a delicious and easy soup - perfect for the warmer months of summer as a cool and refreshing lunch! This recipe requires no cooking or baking of any kind, so if you're looking to avoid the heat this is the recipe for you. [Plus, it's really healthy!]
- 2 ripe avocados
- 1 medium cucumber, peeled and diced
- 1 cup plain, low fat Greek yogurt
- 2 cups chicken or vegetable stock
- 1 tsp salt, pepper, and cayenne pepper
- 2 tbsp fresh lime juice
Cut the avocado in half and remove the pit. Then, peel and cut it into evenly sized chunks. Puree the avocado, cucumber, stock, yogurt, lime juice and spices until smooth and creamy.
Add additional salt, pepper, and cumin to taste and garnish with queso [cheese] and avocado strips. [Makes 4 servings.]
