Cranberry Oatmeal Cookies

Few things speak to the flavors of fall like cranberries! Cranberry oatmeal cookies shout “fall!” with every bite. Delicious and easy to make, these cranberry oatmeal cookies are sure to be a family staple!

You’ll Need:

  • 1½ cups flour
  • ¼ teaspoon baking soda
  • ¼ cup shortening
  • ½ cup granulated sugar
  • 1 teaspoon vanilla
  • 1½ cups cranberries, dried
  • 1 cup hazelnuts or walnuts, coarsely chopped
  • 1 teaspoon baking powder
  • ½ cup butter
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 cups rolled oats

Directions:

Preheat oven to 375 degrees. In a medium mixing bowl, combine flour, baking powder and baking soda. Set aside. In a large bowl, beat butter and shortening with an electric mixer on medium to high speed for 30 seconds. Add eggs and vanilla. Add brown sugar and granulated sugar; beat well. Stir in remaining flour mixture. Stir in rolled oats, dried cranberries, and chopped nuts. Do not overbeat. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet. Bake 9 - 11 minutes until edges are golden. [Makes 4 dozen cookies].
