Some mornings it's incredibly hard to drag yourself, and your children, out of bed. We garuntee that the promise of these delicious eggs from Chile will get everyone up in a matter of minutes!


You'll Need:
  • 2 eggs
  • oil for frying
  • Tomato Sauce:
  • 1 small shallot, finely chopped
  • 1 teaspoon olive oil
  • 3-4 tablespoons canned chopped tomatoes
  • 1 tsp cayenne pepper [you can add more or less depending on how much spice you’re into]
  • salt to taste
  • For serving:
  • ¼ avocado cut into thin wedges
  • tortilla chips


For the tomato sauce: Sauté the onion in oil until it is shiny, but not caramelized. Stir in the tomatoes and let them cook with the onions for three to five minutes. Season with cayenne pepper and salt. [If you’re in a hurry you can also use your favorite jarred tomato sauce.]

Cook the eggs your favorite way [we like this dish with poached or fried eggs.] Serve them with the tomato sauce, avocado, and tortilla chips for added flavor.

In Chile, they also like to add cooked black beans, along with chopped green peppers. [Makes 1 serving]
