PEANUT BUTTER AND JELLY SUSHI ROLLS

It’s time to go back to school! We know you’re going to be busy, and packing lunches might be the last thing on your mind. But these delicious peanut butter and jelly “sushi rolls” are a quick, easy, and adorable way to send your kids to school with a healthy lunch.

 

You’ll Need:

  • 2 tbsp creamy peanut butter
  • 2 tbsp jam or jelly [pick your favorite!]
  • 2 slices of bread

 

Directions:

Remove the crusts from the bread slices. With a rolling pin [or even a soup can] flatten both pieces of bread until they are about 1/10 of an inch thick. Spread 1 tbsp of peanut butter and 1 tbsp of jam on each slice of bread and roll tightly into a spiral. Cut each roll into 4 pieces and enjoy! [Makes eight “sushi rolls”]
