This spicy stew is a hearty dish that is sure to please! Chili con carne is a traditional Mexican dish, originally made by the Aztecs. There are currently five SOS Children’s Villages located in Mexico! Chili con carne is fabulous on its own, but can also be added to French fries and hot dogs as a spicy, delicious topping. This easy version can be made in a crockpot!

- 2 large onions, chopped
- 2 tbsp oil
- 2-3 garlic cloves, minced
- 1 lb. ground beef, chicken, pork or chorizo
- 2 10-oz cans beef broth
- 1 can chopped tomatoes
- 2 fresh tomatoes
- 12 oz. tomato paste
- Salt and pepper, to taste
- 1 tbsp cumin
- 1-2 tsp chili powder
- 1 tbsp oregano
- 1 ½ tbsp paprika
- 1 can black or pinto beans
- 1 red bell pepper, diced
- Tortilla chips (optional)
- 1 medium sauté pan
- Food processor
1. Sauté the onion in oil at medium heat until translucent. Right before the onions begin to caramelize, add in the minced garlic and allow it to brown. Remove the onion and garlic and put them into the crockpot.
2. Brown the meat in the same pan used for the onions.
3. Place the peppers and the whole fresh tomatoes in a food processor and puree until smooth.
4. Add the puree, browned meat, canned tomatoes, tomato paste, onion, spices and garlic into the crockpot with the beef broth.
5. Cook on low for 10 hours or on high for 5 hours.
6. Serve with tortilla chips.
