This cucumber and tomato salsa is a healthy alternative to many store-bought salsas! It’s incredibly simple and quick to make and it’s a big hit with kids! Make this salsa in the summertime, when vegetables are fresh and in season, for the best taste!

Ingredients:
- 3 cucumbers
- 3 garlic cloves
- ¾ of a sweet onion
- Grape tomatoes
- ½ jalapeño, seeded
- Bunch of cilantro
- Bunch of parsley
- 1 lime, juiced
- ½ lemon, juiced
- Kosher salt to taste

Directions:
1. Peel and seed the 3 cucumbers. Put in a blender.
2. Add garlic, onion, jalapeño, tomatoes, herbs and juices.
3. Puree the mixture into a liquid, mixing well.
4. Serve chilled.
5. Enjoy with family and friends!
