This dish is prepared every Christmas by SOS mothers at the SOS Village in Lubango, Angola. Try this holiday favorite today!
- 1 whole chicken
- 1 large onion
- 2 ripe tomatoes
- 2 cups palm hash (a product of palm oil extraction)
- 4 cloves of garlic
- 1 lb (about 1/2 kg) of okra
Simmer chicken covered in water. Be careful not to boil the chicken. Season the chicken as desired. (With garlic, salt, black pepper, lemon or vinegar.) Add the chopped onion, tomatoes and palm hash.
When the chicken is nearly done simmering, add the okra. When the okra is cooked, the muamba is ready to be served.
