This healthy cucumber and tomato salsa comes from blogger Lisa Lightner and her good friend Jennifer. It’s incredibly simple and a hit with the kids. Check it out!

You'll Need: 
  • 3 cucumbers
  • 3 cloves garlic
  • ¾ of a sweet onion
  • grape tomatoes
  • ½ jalapeno seeded
  • a handful of cilantro
  • a handful of parsley
  • juice from 1 lime
  • juice from ½ lemon
  • kosher salt



  1. Peel and seed the 3 cucumbers and put in blender
  2. Add garlic, onion, jalapeno, etc. (everything else)
  3. Puree that mixture almost to a liquid, mixing well.
  4. Cut another cucumber (peeled and seeded) into small bite size pieces and mix it in.
