Roasted Asparagus

Roasted asparagus.
Asparagus is one of the healthiest vegetables around. High in protein and low in carbs, fat, and sugar, asparagus makes a great healthy side dish for any meal. While our SOS Mothers in the USA like to roast their asparagus, grilling it is just as delicious!

You’ll Need:

  • 1 lb asparagus spears
  • 1 tbsp olive oil
  • 2 cloves of garlic, chopped
  • Salt, pepper to taste
  • Lemon juice [optional]
  • Shaved parmesan cheese [optional]

Directions:

Preheat your oven to 400 degrees F. While the oven is heating rise the asparagus and cut the tough ends and discard.

Cover a roasting pan in foil and place the asparagus in a single layer spread evenly over the pan. Drizzle with the olive oil and sprinkle salt, pepper and garlic and roll the asparagus to coat evenly.

Roast for 10 to 15 minutes, until lightly browned. For garnish add lemon juice and shaved parmesan after roasting. [Makes 4 servings]
